Potato pancakes are really fun, because it's like making pancakes but they aren't sweet so I actually enjoy the hell out of em. It's also just a comfort food that my mom would prepare for me a lot as a little'un.

I agree with this. I used to mess it up a lot when younger, but since then I have stopped being a stupid child and actually learned how to make it. It also comes out delicious every time. In fact, it's a breeze to make. One of the best quick and dirty meals.
Mine too. I can't cook in the hotel i stay near my university.

When I'm really really in the mood/have time - from scratch red curry. I cook it in a 5 qt pan, slowly for at least 3 hours. The slow cooking helps all the spice and heat really come together, and I make it hot enough to dab my forehead with napkins while eating,

But more common fave - andouille sausage and cabbage, slow sautéed.
