Bohemian Grove. It's at the center of a lot of conspiracy theories because a lot of rich and powerful people go there and don't talk about why or what they do there. In general I think reality is far more mundane than conspiracy theorists believe, and in an instance like this it simply serves as an opportunity for rich/famous/powerful people to party hard without any images or stories leaking to the press. Basically an opportunity for them to party together without meaningful repercussions, like the rest of us. Point is, if you were in spectator mode there you'd either a) see all these powerful people puking their guts out and popping molly or whatever, like a bunch of frat bros, or b) you get insight into the decision making process that rules the world. It's a win/win.

I would spectate political people because i want to know what they are actually hiding.
I would spectate members of intelligence agencies all over the world, try to see who is the most secretive and well trained.
I really want to be in the room when they made the keyboard change decision that was made in thinkpad x230 because i want to see how objectively wrong decisions pass into practice.

Well, I'd still look at those things for my own satisfaction, but I'd probably look at more than just those things too. If I could spectate without limitations of time, I'd want to see how much of history we've been taught is actually true, how much has been half truths or total lies. I'd probably observe humanity's total history too if given the opportunity. It'd be neat to see our very beginning to see how we came to be, because people have tons of theories and beliefs on where they think we came from, but no one actually knows with 100% certainty. Or maybe some people do and it's one of the many secrets kept well hidden.

I would explore the cosmos. I want to see what's going on in Alpha Centauri and distant solar systems. If there is life somewhere out there it would be fascinating to watch it evolve from single celled organisms to civilization.

Since I can't interact with anything on earth it seems pointless to observe anything happening there. And even if I could browse the Internet all day in an incorporeal form, not being able to shitpost would be mental torture.

Besides places like that where the super rich and important talk about stuff I guess I would visit Vatican/Smithsonian vaults, some of those soviet towns far from everything, rural Japan, NOT the ocean, random apartment complexes close to where I live, prisons, random shops in case they got a hidden section like in Pulp Fiction, a shit ton of castles, run down manors in the middle of the forest, some real time SWAT raids, jungles and Window's background-esque locations. I'd also check what random forgotten internet celebrities are up to.
This has been my top fantasy since like forever, go around the world seeing stuff without being disturbed and shit.

I'd sit in on politicians' and maybe celebrities' therapy sessions and stand behind them, watching what they look for when browsing the Web in the evening. Maybe I'd just follow people around in their day-to-day lives minus all what pertains to hygiene. Maybe I'd go to the tallest building and slowly sink, into the Earth's core or start at the sea, or that hole in Russia.
Another fun thing is teleporting between different farms and natural landscapes where animals are, comparing the vegetation and species. I don't know how physical our form is but I'd probably also roll down mountains and tall hills, no pain, nothing stopping me
